WHAT IS A SAUSAGE STUFFER?

You might think that you can only find sausage stuffers in meat shops or wet markets. And the worst thing about it is you can’t use them in there; you can only watch – you’re really missing the thrill here, you know.

Fortunately, modern day stuffers are designed for home use. It’s simply a kitchen tool meant to assist users with stuffing sausages.

A sausage stuffer also comes in many variations. There are the manual types and the electric types. There are also fancy stuffers packed with a lot of features. Moreover, there are standalone stuffers and attachment stuffers meant to work with meat grinders.

In all cases, sausage stuffers use a hand crank and plunger to force the meat into casings gradually. They also have one goal which is to pack the meat well into the casing; otherwise, the meat will fall apart or assume an unsightly shape.

On the other hand, sausages are made from a mixture of ground meats and spices enclosed in a casing that is usually made from intestines or other edible materials. Once the meat is stuffed using the stuffer, they are then cured through cooking, drying, or smoking for preservation purposes.

But if you’re a health buff, you might prefer fresh sausages without any fillers in them like most commercial sausages. If so, the sausage stuffer can be of great use to you because you have control over the entire preparation process—from mixing to preservation.

USING A SAUSAGE STUFFER

If you want to skip reading the manual that comes with the stuffer of your choice, watch the video clip below to learn how to use a sausage stuffer properly.

TYPES OF SAUSAGE STUFFERS

As mentioned earlier, there are many types of sausage stuffers. You should choose one according to the style you prefer, the amount of meat you frequently make into sausages, and your countertop or storage space.

1. Manual stuffer

Manual stuffers are designed for small batches of meat, not to mention they feel very authentic – like you’re using a stuffer from the last century.

They’re most constructed from cast iron, aluminum, or stainless steel. It operates through a plunger system, and it also gives you an option of what size of stuffing tube to use. This type typically handles about 3 lbs. of sausage at a time.

A variation of the manual stuffer is the handheld vertical sausage stuffer. This device looks like an enormous syringe where you put the meat into the body and dispense it through the tip. Curious to see how it works? Click the video below.

2. Electric stuffer

For larger batches of meat, a motorized stuffer is the best option.

A motorized stuffer can either be electric, hydraulic, or vacuum-operated. They have the capacity to produce hundreds of pounds of sausage an hour and are typically used in sausage industries.

The hard thing about using electric is handling the casings which get slippery most of the time and require some monitoring.

WHAT MAKES SAUSAGE STUFFERS A KITCHEN MUST-HAVE

1. Speed

Never waste a good afternoon every again by struggling with stuffing your sausage. A sausage stuffer can effortlessly pack pounds of perfect sausage in less than an hour.

2. Customization

Unlike pre-packed sausages from profit-oriented manufacturers who probably add fillers or uses fake meat to create sausages, having your sausage stuffer lets you customize the way you mix ingredients and pack the sausage for your satisfaction.

3. Gives you options

A sausage stuffer with an interchangeable nozzle gives you the option to create your pepperoni, bratwurst, and other meat-filled goodies. Simply change the nozzle to make a slew of various meat sizes for your family.

A ROUND-UP REVIEW OF THE BEST SAUSAGE STUFFERS IN THE MARKET

1. LEM 5-Lb Stainless Steel Vertical Sausage Stuffer

LEM Products 5 Pound Stainless Steel Vertical Sausage Stuffer

Via Amazon.com

This amazing manual stuffer is all you need for stuffing your sausages for a lifetime. It features a stainless steel construction, two clamps for securing the stuffer, a medium-sized cylinder reservoir, and a plastic piston with a handy air-release valve.

It also comes with three stuffing tubes of different sizes to suit the size of your casing which is pretty great because it doesn’t put any restriction on the size of casing you have or want to use.

We were amazed by this stuffer. First, it’s easy to operate – even my 5-yr old niece even knows how to use this thing.

Second, we were surprised by its ingenious air-release valve in the piston. We thought that it must be manually operated but no, there is a large foot on the bottom of the piston. When it comes in contact with the meat, it closes the air valve -- a huge plus factor for its well-thought-of design.

AIso, we had no problem with the plastic stuffer tubes. With LEM’s stuffer tubes, the air introduced into the tube seem to travel back up the outside of the stuffer tube.

The best part is how this stuffer maximizes the meat – only a little meat is left after the piston bottoms out which is hardly enough to make a little sausage patty.

Furthermore, cleanup was pretty quick. The plastic piston seemed to be a hydrophobic plastic that nothing adhered to, so it washed up easily.

PROS

  • Durable built
  • Easy to operate
  • Easy clean-up
  • Well-designed air valve

CONS

  • The cylinder might be too small for some people

2. Hakka 7-lb Vertical Sausage Stuffer

Hakka 7 Lb/3 L Sausage Stuffer 2 Speed Stainless Steel Vertical 5-7 Lb Sausage Maker by HAKKA BROTHER

Via Amazon.com

Planning to snack on sausage for the weekend football game? Then this stuffer is an ideal option.

This product is equipped with two fill rates systems that are quick and easy to use. It also features two speeds that come in handy for making a large batch of sausage. For novices, it’s best to start with the slower speed, then kick it up to the faster setting once you get the hand of the device.

Another great thing about this stuffer is it offers four nozzles of different diameters for your casing sizes. Want to make a small, bite-sized sausage? Use the 16 mm nozzle. For making bigger sausages like the ones you usually serve at barbecues, it’s safe to use the 38 mm nozzle.

One thing we loved about this device was the air-release valve. Instead of blowing the air through the bottom of the casings which may create air spaces, it blows the air up the cylinder.

We tried this outstanding stuffer and ran about 150 lbs of sausage with no issues at all. The unit is extremely well-built –- the welds are solid, and you can tell they are done by hand. The base and the meat canister are also very solid as well.

One downside to this stuffer is the insane amount of machining oil that it has inside. We discovered it after we disassembled the unit to degrease it.

Furthermore, we saw that the gearing assembly is also well-constructed but lacks a reverse lock. It simply means don't let go of the handle when you are cranking because it will quickly spin the other way around from the pressure.

PROS

  • Well-constructed
  • Large capacity
  • Features two speed options
  • Has a variety of nozzle sizes

CONS

  • Contains huge amounts of machining oil
  • Lacks a reverse lock

3. New Vivo 7-lb Vertical Sausage Stuffer

New VIVO Sausage Stuffer Vertical Stainless Steel 3L/7LB 5-7 Pound Meat Filler ~ by VIVO (STUFR-V003)

Via Amazon.com

The New Vivo Vertical Sausage Stuffer features an all stainless steel construction, a metal plunger with an air-release valve, four nozzle sizes, and a wonderful cylinder that can tilt back for convenient filling.

It’s very obvious that this unit is well-constructed. The all-metal gears look sturdy, unlike other stuffers which use hard plastic in some parts. Furthermore, the exterior of the piston is secured with a rubber gasket so sausage can't seep through in all directions.

We’re in love with this stuffer because it makes stuffing a breeze with its tiltable cylinder. Simply tilt it back if you want to load it with ground meat and put it back into place to start stuffing. The tilted cylinder also makes cleaning very effortless too.

We can say that this stuffer has quality written all over it. Some of the things we love with this stuffer are: it’s well built, everything can be disassembled which makes cleaning easy, smooth gears, excellent air-release valve, and the tilted cylinder is very convenient.

The only con we found with this unit is the hand crank isn’t that secured. If VIVO only drilled a small hole in the handle part and attached a hitch pin, we think this inconvenience can be resolved.

PROS

  • Well-constructed; all stainless steel gears
  • Large capacity
  • Tilting cylinder for convenience
  • Has a variety of nozzle sizes
  • Easy clean-up

CONS

  • The hand crank tends to dislodge from the unit when in use

4. Weston 7-lb Vertical Sausage Stuffer

Weston Manual Vertical Sausage Stuffer, 7-Pound Capacity

Via Amazon.com

Similar to the other manual stuffers in our list, the Weston Vertical Stuffer features a large-capacity upright canister, stainless steel construction, heavy-duty gears, an excellent pressure release valve, and it’s unique features – a rubber feet for utmost stability and stainless steel funnels.

This is a very sturdily built machine. However, you must be aware that this is covered with machine oil and some rubbery film inside the press when it arrives -- you have to get rid of them before you use this unit.

Also, the interior of the plunger where it has been ground has some minor pitting which could also become unsanitary if you aren't careful enough to clean it really well.

The only con we saw with this machine is it’s not heavy enough. Like if you have to use it, it needs to be clamped even if you’re just stuffing a light load.

Also, the base moves a little when you start cranking. We think Weston needs to pay attention to even the smallest machining details. Otherwise, this stuffer is easy to use and well-built.

PROS

  • Well-constructed; all stainless steel gears
  • Large capacity
  • Stainless funnels
  • Has a variety of nozzle sizes
  • Easy clean-up

CONS

  • Could be a bit heavier; has the tendency to fly from the countertop
  • The welding looks unpolished

5. Kitchener 5-lb Vertical Sausage Stuffer

Kitchener 5-Lb. Stainless Steel Sausage Stuffer

Via Amazon.com

Among the features of this stuffer are a removable steel cylinder and base for easy cleaning, a food-grade plastic piston with a built-in stainless steel air-release valve to avoid blowouts, an upright canister that can hold as much meat as a horizontal stuffer, and three different sizes of stuffing tubes.

Admittedly, there’s nothing special with this stuffer. It shares similar features with other manual stuffers and it doesn’t have an innovative piece or part, but this unit works flawlessly.

The plastic gears also prove to be sturdy -- just be sure to avoid turning the handle when the plunger gets to the bottom of the tub. Furthermore, it is easy to tell when the plunger bottoms out-- it empties the cylinder completely with very little meat residue left.

PROS

  • Well-constructed
  • Large capacity
  • Has a variety of nozzle sizes
  • Easy clean-up

CONS

  • Contains some plastic parts
  • The base seemed too small
  • There’s no nozzle size if you want to do a slim casing

THE VERDICT

Our top pick for the best sausage stuffer is none other than the LEM 5-Lb Stainless Steel Vertical Sausage Stuffer.

This terrific stuffer is made of durable materials, has a large capacity for holding meat, has smooth-running gears and valves, easy to operate, and a breeze to clean after.

But the best part is how this stuffer maximizes the meat – only a little meat is left after the piston bottoms out which is hardly enough to make a little sausage patty.
